This healthy vegetarian dinner recipe is ideal for the 17 Day Kickstart Diet, but can also be enjoyed for lunch with a few tweaks here and there for the 17 Day Diet as well.

Keep reading as I’ll share with you which phases and cycles of both diets this is approved for, and the minor changes you might need to make to make it 100% compliant.

Ingredients For The Chickpea Sweet Potato & Spinach Curry Recipe

This recipe is fairly easy and straightforward. It’s quite possible you already have the ingredients hiding somewhere in your kitchen. 

Here’s a rough list of what you’ll need to gather to make this yummy plant based dish:

  • onion
  • fresh ginger
  • garlic
  • sweet potato
  • chili pepper flakes
  • turmeric
  • chickpeas 
  • vegetable broth
  • coconut milk
  • spinach

Which Phases of the 17 Day Kickstart Diet Is This Approved For?

This curry recipe can be enjoyed on all phases of the 17 Day Kickstart Diet.

For the Scrub and Soak Up Phases, you’ll serve this over cauliflower rice to keep it low carb.

During the Stabilize Phase, you may use brown rice.

As a reminder, sweet potato is listed as a “natural starch” and must be eaten by 2pm (although since you’re also eating protein-rich legumes that are also considered a starch, eating this at dinner occasionally should be fine).

Which Cycles of the 17 Day Diet Is This Approved For?

If you’re on Cycle 3, you may enjoy this recipe as-is.

You’ll notice that coconut milk is used in this recipe (what curry dish does not?), and although you won’t find this ingredient on the 17 Day Diet Cycle 3 Food list, you will find other non-dairy milks there. 

When the 17 Day Diet was created years ago, coconut milk likely wasn’t on the radar of the diet creator. Since then, with the introduction of the Kickstart Diet, coconut milk is allowed, so I think it should be fine for Cycle 3.

Protein Substitutions and Enhancements

If you’re not a fan of chickpeas, you can certainly swap out another legume that’s packed with fiber and protein.

Approved Plant Based Protein For the Kickstart Diet

Here are a few suggestions for substitution or additions to this lovely curry recipe for the Kickstart Diet for all phases:

  • Lentils
  • White Beans
  • Black Beans
  • Kidney Beans
  • Tempeh
  • Quinoa

Approved Plant Based Protein for the 17 Day Diet

In addition to the list above for the Kickstart Diet, also consider the following for Cycle 3 of 17 Day Diet:

  • Peas
  • Soy Beans
  • Butter Beans
  • Lima Beans

Normally during the 17 Day Diet, natural starches must be eaten by 2pm. During Cycle 3, you have the option to eat legumes at dinner time. However, as the book states, if you wish to continue losing weight on Cycle 3, then it’s best to eat these by 2pm.

The 17 Day Diet also includes a large variety of legumes that are perfect for added protein and fiber

Chickpea, Sweet Potato & Spinach Curry for the 17 Day Diet and Kickstart Diet

Ingredients

  • 1 tbsp. olive oil
  • 1 medium onion, chopped
  • 1 inch fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 medium sweet potato, peeled, chopped
  • 1/2 tsp of chili pepper flakes
  • 1/2 tsp turmeric
  • 14 oz. can chickpeas with brine
  • 2/3 cup vegetable broth
  • 1 cup coconut milk, canned
  • 3 cups spinach, chopped

Instructions

    1. Heat the oil in a frying pan, add the chopped ginger, and garlic. Fry often, stirring for about 3 minutes.
    2. Add the peeled and chopped sweet potato, season with salt and fry for another 2 minutes, then add the spices and mix well.
    3. Next, add the chickpeas along with the brine, broth and coconut milk. Mix everything and bring to a boil.
    4. Cook for about 15 minutes without covering, stirring every now and again, until the sweet potatoes are soft.
    5. Finally, add the spinach, mix and take off the heat, and wait until it is wilted. Serve with rice (brown rice for Stabilize Phase).

Notes

Approved For:
17 Day Kickstart Diet – All Phases (see note below)
17 Day Diet – Cycles 3 (see note below)

Kickstart Diet – For the Scrub and Soak Up Phases, omit the rice. May serve with cauliflower rice instead. For the Stabilize Phase, use brown rice.

17 Day Diet – Use brown or basmati rice. Coconut milk is not on the food list, but other non-dairy milks are so this should be fine (or use unsweetened almond milk although it will change the flavor).
