Roasted Tomato and Pepper Soup (vegan)

This Roasted Tomato and Pepper Soup is packed with fibre and vitamins to hold you nutritious through the winter season months and is whipped up in times.  Roasting the vegetables provides out their purely natural sweetness and intensifies the flavour.  Depending on your tomatoes, you may want a pinch of sugar at the finish to taste!


  • 1 massive sweet onion, quartered
  • 2 lbs. ripe tomatoes, quartered
  • 2 purple, yellow or orange peppers, seeded and quartered
  • 5 tablespoons added virgin olive oil, divided
  • 3 cloves garlic
  • 1/2 cup white wine (or inventory)
  • 1 litre stock (vegetable or rooster)
  • 1/2 cup about chopped fresh new basil, loosely packed
  • salt and pepper to style
  • pinch of sugar to style (optional)


ROAST THE Vegetables

  1. Preheat the oven to 400 F and line a baking sheet with parchment paper.

  2. Toss the veggies with 3 tablespoons of the olive oil, period with salt and pepper, and roast for close to 45 minutes, until eventually the vegetables are delicate and golden brown with the tomatoes blistered.  Remove from the oven.


  1.
